Excuse my ignorance here, but can a keeper be brought on and played outfield, ie not as a keeper?

They can.... but... why?

In the same way an outfield player goes in goal when the keeper has been taken / sent off of there's no replacement. If we're short of players, maybe a keeper is on the bench to cover another position. Otherwise 2 keepers on a bench is a bit of overkill isn't it?

It's not difficult. If you have faith in Ruddy for anything other than a penalty shootout then you don't put McCormick on the bench too.
