8. A quick table diagram shows that the left legs will never quite be in sync in terms of taking off but will land together on the dad's 4th and son's 6th... I think.

You can’t count 12:00 twice.

I don’t ...

Also I don’t understand 11 as the answer ...

From noon, 12 hours = midnight

If you count noon as first cross time hands cross (as per the question)

1:00pm = 2nd time
2:00pm = 3rd
3:00pm = 4th
4:00pm = 5th
5:00pm = 6th
6:00pm = 7th
7:00pm = 8th
8:00pm = 9th
9:00m = 10th
10:00pm = 11th
11:00pm = they cross for a 12th time right?
12:00am (midnight) end but hands don’t cross they just “meet”

Or am I missing something very obvious.

They don't cross on the hour... It will be just after 1:05, then 2:10, 3:15 and so on until the last crossing which would be around 10: 54 after which the next crossing is 12:00

They will cross each other eleven times as indicated at the times below.
1). 12:00 2). 1:05 3). 2:10 4). 3:16 5). 4:21 6). 5:27 7). 6:32 8). 7:38 9). 8:43 10). 9:49 11). 10:54.
You cannot count 12:00 twice.
If you consider several twelve hour periods in a row, the twelve o'clock coincidence occurs only once in each cycle.
Therefore it is counted initially or at the end.

12. 60 ounces. You only mentioned the weight of the bottle, so, if it was 120 ounces the wine weighed 60 ounces.
